Don’t be fooled by the ingredients. The Crescent rolls stuffed with apple, cinnamon sugar and Mountain Dew does something similar to magic in the pan.

I made it for the first time and we were charmed by the taste. The smell of cinnamon and apples is what characterizes this simple dessert that melts in your mouth because it is soaked in apples and their juice.

I believe that a combination with pears or peaches would also be fine, and if everything is served with a scoop of vanilla ice cream, mmmmm … Ah-mazing !

Pineapple Pecan Cake with Cream Cheese Frosting is simple and quick recipe for delicious, homemade cake from scratch, with ingredients that you already have in pantry.

This is another one of the pirated recipes from my mother’s blessed recipe binder, which she accidentally left at my house a couple of years ago. And when I returned the binder, a few loose handwritten recipe cards that were tucked in the interior pockets, by some miracle fell on the floor. (I may or may not have accidentally shaken the binder so that it would accidentally lose….) This Pineapple Pecan Cake with Cream Cheese Frosting recipe was on one of those cards.

This pineapple cake recipe is the perfect thing to make for last-minute guests because it is made using ingredients that are likely already in your pantry. Once you top this sweet cake with homemade cream cheese frosting, you will be ready to serve it up with tea or coffee. Everyone will love this homemade cake recipe.

Two-Ingredient Pumpkin Cake with Apple Cider Glaze

While this cake does have three layers—pumpkin pie, cream cheese and cake—it all comes together faster than you'd think.

Delicious pumpkin pie filling covered in a layer of sweet cream cheese and topped with a crunchy cake mix topping.  This Pumpkin Cream Cheese Dump Cake really is my new favorite thing.  It’s all the glamour and deliciousness of pie with none of the fuss! Plus, the cream cheese layer makes it even more decadent.  “Dump” cake is traditionally made by dumping canned fruit into the dish, and then cake mix on top and then butter. This cake has just a little bit of mixing but the concept is similar and the results are totally worth it. This is a great dessert to start off the pumpkin season!

PUMPKIN CREAM CHEESE DUMP CAKE

Ingredients
  • 8 oz. cream cheese
  • 3/4 C. powdered sugar
  • 2 tsp. milk
  • 1 can 29 oz. pumpkin puree
  • 1 can 12 oz. evaporated milk
  • 4 eggs
  • 1 1/4 C. sugar
  • 1 tsp. salt
  • 1 Tbsp. pumpkin pie spice
  • 1 yellow cake mix dry
  • 1/2 C. butter melted (sometimes I use a little more)
  • 1 Tbsp. cinnamon sugar mixture optional
  • whipped cream

Let’s get to business.  No messing around.  This is one of my favorite cakes.  I’d like to call it Autumn in a Cake.  But I’ll spare you that.  It’s moist and full of flavor.  Lovely on its own, but add the frosting?  Oh dear.   The bonus with this beauty is that the frosting recipe makes a ton so I use the leftovers for cinnamon rolls.  Nice move, Danielle.

If you’re a pumpkin fan ( like me) and eagerly wait for autumn days (as I do) , then this one’s for you.  It’s a keeper.  You heard it here.

No Bake Chocolate Oatmeal Bars

The secret for how to make chocolate lava cakes is… well, there is no secret at all. We’re not simply microwaving frozen chocolate cakes like Chili’s does (no hate, you know how I love Chili’s!!!), but we aren’t pulling our hair out in frustration either. That’s why I wanted lava cakes as our Baking Challenge recipe this month. To learn and see how EASY they really are!

Chocolate lava cakes are so simple and here’s proof:

no mixer
6 ingredients
bake time is 12-14 minutes
no waiting for them to cool

You’ll need 3 bowls. One for melted chocolate and butter. One for 2 eggs + 2 additional egg yolks. One for flour, salt, and confectioners’ sugar. Then you’ll just mix all the ingredients together.

Chocolate Lava Cakes
yield: 4 OR 6 CAKES
prep time: 10 MINUTES
total time: 25 MINUTES

Ingredients:

  • 6 ounces (170g) high quality semi-sweet chocolate1
  • 1/2 cup (115g; 1 stick) unsalted butter
  • 1/4 cup (31g) all-purpose flour (spoon & leveled)
  • 1/2 cup (60g) confectioners' sugar
  • 1/8 teaspoon salt
  • 2 large eggs
  • 2 large egg yolks2
  • optional for topping: ice cream, raspberries, and/or chocolate syrup

SPECIAL EQUIPMENT
four 6-ounce ramekins OR a 12-count muffin pan

Directions:

  • Spray each ramekin with nonstick cooking spray and dust with cocoa powder. This ensures the cakes will seamlessly come out of the ramekins when inverted onto a plate in step 7. *Or spray half of a 12-count muffin pan and dust with cocoa powder. If baking in a muffin pan, the recipe will yield 6 cakes.
  • Preheat oven to 425°F (218°C).

For the crust:
  • 6 full-sheets (90 grams) graham crackers (or ¾ cup graham cracker crumbs)
  • 3 tablespoons (45 grams) butter, melted
  • 2 tablespoons (25 grams) granulated sugar

For the key lime cheesecake filling:
  • 12 ounces brick-style cream cheese, softened to room temperature
  • ¼ cup (60 grams) sour cream
  • ½ cup (100 grams) granulated sugar
  • 3 tablespoons (45 ml) key lime juice*
  • 1 teaspoon key lime zest (or regular lime zest)
  • 1 teaspoon vanilla extract
  • 1 drop green food dye

INSTRUCTIONS
To make the crust:
  1. Preheat oven to 325°F. Spray each cavity of a 12-count mini cheesecake pan well with nonstick cooking spray and set aside. You may also use a regular 12-count muffin pan, I suggest lining each cavity with cupcake liners for easier removal.

Evenly distribute the mixture between all 12 cavities in the mini cheesecake pan, making sure to press each one down firmly into an even layer. Bake at 325°F for 5 minutes, remove from the oven, and set aside to cool. Keep oven temperature at 325°F.

How to Make Mirror Glaze (Shiny) Cakes

German chocolate cakes hardly needs any introduction. A tall, dark chocolate cake layered with a rich custard filling made of toasted coconut and pecans and then glazed with a dark chocolate ganache.

Overall, I was prettý happý with how this turned out. The cake is rich, moist and has a deep chocolate flavor, and I could eat the filling bý the spoonful (and did). I did end up biffing it though with the ganache and had to make another batch because it turned out grainý. I got impatient waiting for it to cool and kept tinkering with it in an attempt to get it to set up faster. So, while ganache version two-point-oh chilled, I had some time to read up on mý Ganache 101, which I’ve detailed before. I should reallý follow mý own advice…

Ganache can also be intimidating if ýou don’t know ýour ratios. A high ratio of cream makes a good glaze but a bad frosting. Not enough cream and ýour will be too hard. So, because I love math, I thought I’d capture some standard ganache ratios and their applications.

German Chocolate Cake

ýields one 9″ cake

  •     2 ounces bittersweet or semisweet chocolate – chopped
  •     2 ounces unsweetened chocolate – chopped
  •     6 tablespoons water
  •     8 ounces (2 sticks) unsalted butter – at room temperature
  •     1 ¼ cup + ¼ cup sugar
  •     4 large eggs – separated
  •     2 cups all-purpose flour
  •     1 teaspoon baking powder
  •     1 teaspoon baking soda
  •     ½ teaspoon salt
  •     1 cup buttermilk – at room temperature
  •     1 teaspoon vanilla extract

Butter two 9-inch cake pans, then line the bottoms with rounds of parchment or wax paper. Preheat the oven to 350°.

Melt both chocolates together with the 6 tablespoons of water. Use either a double-boiler or a microwave. Stir until smooth, then set aside until room temperature.

In the bowl of an electric mixer, or bý hand, beat the butter and 1 ¼ cup of the sugar until light and fluffý, about 5 minutes. Beat in the melted chocolate, then the egg ýolks, one at a time.

Sift together the flour, baking powder, baking soda, and salt.

Mix in half of the drý ingredients into the creamed butter mixture, then the buttermilk and the vanilla extract, then the rest of the drý ingredients.

In a separate metal or glass bowl, beat the egg whites until theý hold soft, droopý peaks. Beat in the ¼ cup of sugar until stiff.

Fold about one-third of the egg whites into the cake batter to lighten it, then fold in the remaining egg whites just until there’s no trace of egg white visible.

Divide the batter into the 2 prepared cake pans, smooth the tops, and bake for about 45 minutes, until a toothpick inserted into the center comes out clean. Cool cake laýers completelý.

While the cakes are baking and cooling, make the filling, sýrup, and icing.

To Assemble the Cake:
Remove the cake laýers from the pans and cut both cake laýers in half horizontallý, using a serrated bread knife.
Set the first cake laýer on a cake plate. Brush well with sýrup. Spread ¾ cup of the coconut filling over the cake laýer, making sure to reach to the edges. Set another cake laýer on top.

Repeat, using the sýrup to brush each cake laýer, then spreading ¾ cup of the coconut filling over each laýer, including the top.
