CHRISTMAS TREE CREAM CHEESE DANISH

You know that excited feeling you get when you walk down the Christmas aisle and it’s Just. So. Sparkly. You just want to buy everything? (It can’t just be me who feels that way?) When I was in university, my sister and I shared a townhouse and the first Christmas we spent there together, we went to the hardware store and bought a Christmas tree, tinsel and tons of ornaments to put on it.  And I mean TONS of ornaments (and lights for that matter…).

It was the first time we were let loose down that sparkly Christmas aisle, and we fell in love with everything we saw. There wasn’t an empty branch on the whole tree by the time we were done! We were so proud of our tree that we called up my parents, and even our grandparents, and invited them over for dinner that night, just so they could admire our very first Christmas tree.

Easy Christmas Tree Brownies

These Christmas Tree Brownies are SO EASY and don’t they look adorable?! Just cut the brownies into triangles, add a candy cane trunk, squeeze on some icing, and sprinkle on your favourite toppings! Seal them in an air tight container, and the icing will harden overnight. They travel well and make a great treat for a Christmas party! Oh, and did I mention, they make me SO HAPPY!

Easy Christmas Tree Brownies to Celebrate With Your Family


This Cranberry Christmas Cake is one of those recipes that is an instant favorite every single time someone new tastes it.

Tart cranberries, sweet buttery cake, and a fantastic texture all combined to basically beg me to eat another piece.

This is an absolutely perfect cake that takes very little effort to make. No icing, no topping, nothing else is necessary at all. It was reminiscent to me of a coffee cake in texture but much lighter than the typical heavy version.

This might be the only cake I’ve ever tasted that basically screams holidays to me. It is pure heaven to eat.

I made nine different desserts for a Thanksgiving event the first year I made this cake and this was my absolute favorite, by far. That hasn’t changed in the 5 or more years since we first tried this cake.

While I have no problem sending almost all other leftover sweets home with friends and family, I always save a few small pieces of this once just for myself. This Cranberry Christmas Cake is one of my all-time favorite treats to enjoy with Cafe con Leche in the morning, afternoon or evening.

WHAT IS THE DIFFERENCE BETWEEN BUCKEYES AND PEANUT BUTTER BALLS?
In most recipes, the only difference is how they are dipped in chocolate. Buckeyes are only partially dipped in chocolate, leaving the peanut butter showing on the top. That way they look like the nuts from the buckeye tree. Peanut Butter Balls are traditionally covered in chocolate. (see the picture below.) This was one I messed up on and dipped the entire peanut butter ball in chocolate.

The actual process in simple, cream the peanut butter and butter until smooth. Then beat in the powdered sugar and vanilla. Roll into balls. Chill. Dip in Chocolate. Chill and enjoy. But there are a few handy tips I can give to make the process a bit easier.

Peaches have to be my absolute favorite fruit to eat fresh in season and I’m starting a love affair with browned butter. It is tempting to substitute it in every recipe calling for plain old butter. That rich, nutty flavor is enchanting, and is perfect paired with a sweet, juicy peach.

BROWN BUTTER PEACH CUPCAKES

BROWN BUTTER PEACH CUPCAKES

A soft, moist bread studded with blueberries and bright lemon flavor. It’s a quick and easy bread recipe everyone will love. 

This bread is extremely quick. I guess that why they call it quick bread. It only takes 10 minutes to stir up. The longest part is the baking, but that’s hand-off time. In other words, time that you can use to fold the laundry. None of the ingredients are unusual for quick bread. Except maybe the Greek yogurt, which gives it a very moist consistency. Start with the oven temperature higher at 375 F degrees, and then 20 minutes into the baking time lower it to 350 F. I am not sure the science behind it, but I have found it makes for nicer, domed muffins and quick breads without sunken middles.

Last week I officially declared spring was here. On the way to work I would admire the emerald pastures and misty green hills in the distance. Finally, the brown grayness of winter has given way to a brilliant spring, and I have been enjoying every second of it. The hundreds of fresh produce stands in the county are opening and selling beautiful produce still fresh with dew from the fields. Asparagus and rhubarb are some of my favorites. And it seems that spring is the only time you can find rhubarb. Unless you freeze some for next year, which I’m going to try and do.

There’s just something about strawberries, they’re so sweet and amazing, one of my favorite berries.

Who doesn’t love the cinnabons at the malls? Just walking by their stores and smelling these cinnabons baking, drives me up the walls. It’s very hard to keep on walking and not stop and spend $5 on a cinnabon.

I have made this recipe many times over the years and have used both butter and margarine. I believe Cinnabons are originally made with margarine, so if you want to have a true copycat recipe use margarine. Honestly they taste the same to me so it’s your choice, butter or margarine.

  • 2 eggs

Filling

  • 1 cup brown sugar packed
  • 3 tbsp cinnamon
  • 1/3 cup butter unsalted, softened, or margarine

  • 1 1/2 cups powdered sugar also known as icing sugar, or confectioner's sugar
  • 1/4 cup cream cheese at room temperature
  • 1/2 tsp vanilla extract

Cinnabons Cinnamon Rolls

Or should I say HEAVEN!?  I used to make this dessert all the time years ago.  I haven't made it such a long time, because believe it or not, I got Oreo Layered OUT!  I made it so much because it is just so dang yummy.  My love for the stuff is back.  I promise this time I won't make it on a weekly basis and eat half the pan each time.  This is such a great summer time dessert.  It is so fluffy and delicious.  Give it a try!

Oreo Layer Dessert

  • 1 pkg of regular Oreos
  • 1/2 c. of butter
  • 1 lg box of instant chocolate pudding
  • 2-8 oz cool whips
  • 8 oz. of cream cheese, softened
  • 1 c. powdered sugar


Crush the whole package of cookies either with a food processor, or in a bag and a rolling pin.  Save a 1/2 c. to sprinkle on top of dessert when it's done.  Pour remaining crumbs in a 13x9 pan.  Melt butter and pour into crumb mix.  Stir it up good and press crumbs in bottom of pan to make a crust.  Make chocolate pudding according to package directions and let it setup in the fridge.  In a mixing bowl blend cream cheese until nice and smooth and then add powdered sugar, mix.  Then fold in 1-8 oz thing of cool whip.  Top oreo layer with cream cheese mix, then pudding, then your last 8 oz thing of cool whip, and then sprinkle remaining Oreo's on top.  Cover and refridgerate until ready to serve.

BBQ Meatballs.. easy to make in the crock pot, this recipe only takes 3 ingredients and 5 minutes to prep! Doesn’t get better than that.

These crock pot grape jelly meatballs are a family favorite. They are seriously so good and the perfect appetizer for game day! They almost remind me of sweet and sour meatballs but taste better! My Grandpa has been making them for years and we always loved them growing up. My sister even talked him into making them as an appetizer at her wedding. Everyone loved them! Now of course my family has their actual “homemade meatballs” which are amazing and I’ll have to that recipe soon. The best part about these bbq meatballs is no one would ever know they were so simple to make. You could even turn them into a main dish and serve them over sticky rice. YUM!
