This Twice Baked Potato Casserole recipe from The Pioneer Woman is an easy make ahead side dish idea for Thanksgiving, Christmas, or any family dinner!

Ingredients

  • ½ pound bacon
  • 8 medium russet potatoes
  • 3 Tablespoons canola oil
  • 2 sticks salted butter softened and sliced into cubes.
  • 1 cup sour cream
  • 1 cup whole milk
  • 1 cup grated cheddar cheese plus more for topping
  • 2 teaspoons seasoned salt
  • 3 green onions sliced
  • Salt and pepper to taste


Instructions

  • Preheat the oven to 400 degrees.
  • Take out the butter, sour cream, and milk and set them aside, they shouldn’t be cold when combined with the potatoes.
  • Scrub the potatoes clean. Wipe them dry and rub them with canola oil. Place them on a baking sheet and bake for 40 minutes, until they can be easily sliced through.
  • While the potatoes bake, cook the bacon in a large pan slowly on low heat. As the edges begin to curl, use tongs to flip them over periodically until evenly cooked. Set them aside on a paper towel-lined plate to cool once finished.
  • Remove the potatoes from the oven and decrease the heat to 350 degrees.
  • Leave the skins on two of the potatoes and peel and discard the remaining skins. Cut each potato into thirds and add them to a large mixing bowl.
  • Crumble the cooked bacon and set some aside for topping the casserole. Add the rest to the mixing bowl along with the butter, sour cream, milk, grated cheese, seasoned salt, and salt and pepper.
  • Smash the potatoes with a potato masher until well-combined and creamy.
  • Add the potatoes to a greased baking dish. (Mine was 11.25″x7.75″ but any size works.)
  • Top the casserole with reserved bacon and additional shredded cheese.
  • Bake, uncovered, for 20-25 minutes. Top with sliced green onions and serve!

Recipe Notes

Make-Ahead Method
-This casserole can be prepared up to two days ahead of time. You will prepare the entire casserole as noted in the recipe but you’ll hold off on baking it until you’re ready to serve it, and will need to refrigerate it until then.
-When you’re ready to bake it, you’ll want to cover the top and bake for 10-15 minutes. Then remove the top, and bake for 25 minutes.

Crock Pot Method
-Follow the instructions as outlined, but assemble the casserole in the Crock Pot instead of a casserole dish.
-Heat on low for 2 hours or on high for 1 hour. Once the cheese is melted, switch it to warm.
-Garnish with green onions just before serving.

I have another DELICIOUS crock pot recipe to share today! I’ve been obsessed with using my crock pot lately, especially on busy days. There are so many awesome recipes to make in them including this Beef and Broccoli! It is so so yummy.

This Chinese take-out favorite is so easy to make at home, right in your crock pot. The tender beef simmers in a homemade sauce that is so incredibly flavorful. Throw in the broccoli the last 30 minutes and then dinner is ready to be devoured. I served ours over a bed of white rice and it was nothing short of amazing!

These meatballs are perfect over rice, some mashed potatoes, and of course over some noodles. I enjoyed eating them just like that, just with the sauce, they’re so good smothered in that sauce, sweet with a hint of spicy, love those Thai flavors.

Chicken Enchilada Rice Casserole

Easy Chili Cilantro Lime Chicken is salty, sweet, sour, and spicy and is great on salads, with rice, or in burritos and wraps! 

This easy grilled chili lime chicken is just one of a whole bunch of healthy recipes I will be sharing with you in the upcoming weeks. It’s easy to make, healthy, spicy, and delicious. The chicken is marinated in a lime, chili, and spice marinade then grilled to perfection. You can make the chicken on the stove top in a pan or griddle or grill it outside on a grill. Ether way, this chicken is simply incredible!

Grilled Chili Cilantro Lime Chicken

If you will be making this chicken for a salad, double the marinade and reserve half for the dressing. Be sure to reserve it before adding the marinade to the chicken in order to avoid contamination.

Grilled Chili Cilantro Lime Chicken

Crispy quesadillas filled with beans, sautéed onions, bell pepper, avocado and lots of cheese. These avocado black bean quesadillas are filling and make a great vegetarian meal too! 

delicious avocado, veggie and bean packed quesadillas that are crispy on the outside, and cheesy on the inside. They make a great lunch and are also very filling too! I don’t know if it’s just me but there’s just something magical about avocado and melted cheese.

MEAL PREP – HEALTHY ROASTED CHICKEN AND VEGGIES

What’s not to love about dinners in foil right? Easy to make, easy clean up, and they taste delicious! This Pesto Salmon with Italian Veggies is no exception! It’s full of flavor and you end with perfectly baked salmon. I had actually never added pesto to my salmon until this recipe and I absolutely loved it and will combine the two again and again!

These Hibachi Steak Lettuce Wraps are a quick and easy dinner when you’re pinched for time! Quick cooked steak, rice and yum yum sauce are wrapped in lettuce leaves.

Cooking up the steak in the skillet is a VERY quick process since the steak is sliced into bite sized pieces. I love this recipe not just because it’s quick, but because it uses very simple ingredients; lettuce, steak, butter, and soy sauce are the base of this recipe.

Creamy Sun Dried Tomato Parmesan Chicken (No Cream)

Slow Cooker Chicken and Mushroom Stroganoff takes just minutes to throw in the slow cooker!  It is so creamy and delicious and will become an instant family favorite! 

It has minimal ingredients and the chicken cooks to tender and juicy perfection in the creamy mushroom sauce.  I did use a can of cream of chicken soup but if you have some extra time you can make my homemade cream of chicken soup.   The sauce is so easy and creamy and perfect with some noodles tossed inside.

I loved the flavor in the creamy sauce and the mushrooms hidden throughout were awesome.  This made the perfect meal for my family and is so simple we will make it again and again!

Slow Cooker Chicken and Mushroom Stroganoff

The combination of honey and garlic is music to my tastebuds, but you know what’s even better than that? We have a 20 minute dinner on our hands tonight. That’s why I love cooking seafood for dinner so often: it’s quick. The shrimp takes a whopping 5 minutes to cook on the stove, while the marinating takes another 15. Ok ok so whisking the marinade together will take an extra 12 seconds, but whatever.

Quick & Healthy Dinner: 20 Minute Honey Garlic Shrimp

This is not an authentic Greek dish (as far as I know!) but it is made using classic Greek ingredients. The beauty of this is that it is all made in one pot / pan. Cooking the rice with the chicken on top adds extra flavour to the rice because the chicken juices get soaked up by the rice. MARINATING TIME: 20 minutes to overnight.

I want to say the star of this dish is the chicken. But that would be lying to you. Because this, my friends, is all about the RICE! I’m not sure if many of you cook dinner with kielbasa/smoked sausage, but there are lots of things you can do with smoked kielbasa/sausage.  So I thought maybe I could offer a idea that will inspire you to come up with totally new dinner. This recipe made dinner time a snap, it really is a throw together kind of meal because it all comes together in just one pan, and it does taste good and makes a lot!

Conclusion – If You Are In a Hurry and have a big family, or hungry teenagers, this would be perfect, and it’s not too expensive to make either.

One Pot Kielbasa Pasta

One Pot Kielbasa Pasta

Spaghetti, spaghetti sauce, beef and cream cheese mixture meal … that tastes like a million bucks.

Well, this “rich” pasta, which deserves to proudly carry that name, will help you with that. I think I would start each post about pasta with same sentence: “I really like to eat pasta”. A lot! Basically every pasta I prepare is delicious, but sometimes I like to play with the Spaghetti and “dress” it in the “elegant suit” as if I had MILLION DOLLARS in my pocket.

No, I’m not saying this spaghetti costs a million dollars to make! It’s just so good that it tastes like a million bucks!

Million Dollar Spaghetti

This recipe has proven to produce thee best pot roast I've ever made.  Every component is pure perfection.  The meat is juicy and fall-apart tender.  The vegetables are cooked just right and are full of flavor.  The seasonings are simply spot on and the broth yields a fabulous gravy-like sauce that is divine when poured over everything prior to serving.

We usually have leftovers of this, so we often make hash the following day.  The leftover roast is, also, fabulous utilized in a hot roast beef sandwich for lunch.

Yields 4 - 6 servings.

Ingredients:

  • 1 chuck roast (mine was 3 pounds)
  • Olive oil
  • 1 pound carrots, peeled and cut into large chunks
  • 2 pounds potatoes, peeled and cut into large chunks
  • 1 onion, peeled and cut into large chunks
  • 2 stalks celery, cut into large chunks (optional)
  • 1 cup beef broth
  • 1 tablespoons corn starch


SEASONING MIX :

  • 2 tablespoons steak seasoning (mine is store-bought and has a blend of peppercorns, garlic, paprika, parsley and salt)
  • 1 tablespoon kosher salt
  • 1 tablespoon dried thyme
  • 1 tablespoon dried rosemary


Directions:

  • Combine together seasoning mix in a small bowl.  Set aside.

  • Coat both sides of meat with olive oil.  Sprinkle on a third of the seasoning mix onto each side.

  • Sear both sides of the meat in a large skillet over medium-high heat.  Transfer roast to slow cooker.

  • Place the vegetables in a large bowl.  Drizzle on a little olive oil to coat vegetables.  Sprinkle on the remaining seasoning mix.  Add the vegetables to the same skillet that was used to sear the meat. Sauté for about five minutes - stirring occasionally.

  • Transfer the vegetables to the top of the roast in the slow cooker.  Pour in the beef broth. Cover with lid.

  • Cook on low for 9 hours or on high for 6 hours.

  • Using a turkey baster, retrieve most of the cooking juices from the slow cooker.  Transfer juices to a small sauce pan and bring to a simmer over medium heat on the stovetop.  Whisk together the cornstarch with a little water.  Blend into the pan juices while whisking.  Bring back to a simmer until thickened.  Taste and adjust seasoning as needed.

  • Transfer the roast and vegetables to a large platter.  Ladle the gravy over.  Serve immediately.

Slow Cooker "Melt in Your Mouth" Pot Roast


This lemon garlic butter salmon is a breeze to make and the method of cooking it all together in a foil pouch seals in moisture and keeps the sweet aroma intact. A no-fuss weeknight dinner with no clean up!

  • 2 salmon fillets
  • 1/2 pineapple, halved and sliced
  • ¼ cup butter
  • ⅓ cup honey
  • 4 large cloves garlic, crushed
  • 2 tablespoons fresh lemon juice (juice of ½ a lemon)
  • Chopped fresh parsley
  • Salt and pepper


DIRECTIONS
1. Preheat your oven to 400°F (200°C).
2. In a small saucepan, melt the butter over low-medium heat. Add honey, garlic and lemon. Whisk until the honey has melted through the butter and the mixture is well combined. Add one tablespoon chopped parsley, mix well and set aside.
